Biography:
Dr Diarmuid Sheehan is a Senior Research Officer based at the Teagasc Food Research Centre Moorepark. He previously served as a Programme Manager for a public private partnership, focused on converting research to innovation from product concept to market launch and more recently has published widely in the field of cheese chemistry and technology. His research group is currently focused on areas such as Dairy Food Structure-function and its influence on health properties; Food structuring through Casein-polymer interactions; Physicochemical influences on bacterial metabolic activity within food matrices; Reducing Carbon Footprint/GHG emissions in cheese production; and Small solute entrapment and diffusivity within dairy matrices. He is RFA 1 lead for the Dairy Processing Technology Centre and a Principal Investigator for a number of national initiatives. He is also the Chair of the International Dairy Federation Standing Committee for Dairy Science and Technology and is an Associate Editor for the International Journal of Dairy Technology.
